Banana Oat Pancakes
The recipe is a good way to use up one overripe banana.
Makes 9 pancakes
Ingredients
- 1 overripe banana
- 1/2 cup of plant milk
- 1 cup of oats
- 1/2 Tbsp of baking powder
- 1 tsp of vanilla
- pinch of salt
- plant butter for cooking
Instructions
- Put all of the ingredients in a blender. Blend to combine.
- Heat 1 tsp of plant butter in a non-stick pan over medium heat.
- When the pan is hot, plop in 4 pancakes.
- Cover with a lid, and cook for 3 minutes. When the tops are set, flip the pancakes over. Cook for an
additional 3 minutes.
- Repeat until you’ve cooked all of the batter.
Notes
- The pancakes will be thin.
