Whole Orange Cake

You can make a cake from a whole orange, including the rind. The recipe is from Rainbow Nourishments.

Oranges can vary a lot in size. For a more accurate bake, weigh your orange and scale the other ingredients accordingly.

  1. Wash the orange. Simmer for 30 minutes. Drain the water and let cool.
  2. Chop the orange and remove any seeds. Blend into a paste.
  3. Preheat the oven to 350 degrees F. Line an 8-inch baking pan with parchment paper.
  4. Blend together the orange paste with the rest of the cake ingredients.
  5. Bake for 35-40 minutes.
  6. Let cool before slicing. Leftovers keep well in the fridge for up to 5 days.
